Something legendary is about to happen at Molám.

Chef David Thompson @chefdavidthompson the man who gave Thai cuisine its first Michelin star and author of ‘Thai Food’ and ‘Thai Street Food’, the cookbooks often called the bibles of Thai cuisine, is coming to Poland for the very first time.

Together with Chef ‘Pae’ Patipan Jipromma @shittychef1 Head Chef of Michelin-starred Aksorn @aksornbkk in Bangkok, they’ll create a 9-course tasting menu inspired by the vibrant capital: a journey through its cookshops, street markets, and palace kitchens.

Expect flavours that sing, stories that travel, and a night that feels like Bangkok right here in the heart of Kraków.

What you see on our IG feed might suggest we’re always off at vineyards, throwing staff parties, and popping up around Poland.

The truth is, we work 7 days a week and spend most of our time grounded at Molam HQ in Kraków.
And yes - we also cook Thai food, the modern, fun version of it!

Here’s our Khao Soi - Northern-style chicken noodle curry soup. A Chiang Mai forever classic turned into your Autumn/Winter comfort blanket.

With us since April 2019 - the recipe hasn’t budged, the plating hasn’t blinked… even if others have copied.

A true Molám icon.

Molám Cooks at the Winery | Vol. 3

This time, we took the team down to the tranquil village of Villány in Hungary, near the Croatian border - a place with a long winemaking tradition. Our destination was the vineyards and the Hungarian home of our good friend Horst Hummel @weingut.hummel , a passionate biodynamic and natural winemaker. 

His dedication to natural winemaking is driven by a simple philosophy: 

„Vinification is the art of doing nothing in the right moment and as often as possible”

Anyone into natural wine festivals in this part of Europe probably knows Horst, his big smile, his beautiful wine bottles with the distinctive bumblebee logo, and his passion for good afterparties!

We cooked, enjoyed great wines, wandered through sunny vineyards, cooked again, and indulged in hilarious chats at his place.

Huge thanks to everyone who made this trip happen, especially Horst and Pawel Rymarczyk @rbimportwin and the team back in Kraków holding down the fort at Molám while we headed to Hungary. Cheers to all of you!

Special thanks to @lapurey , who travelled from Berlin to meet the team and helped tremendously with cooking dinners on both nights!

A little peek into our recent adventure in the Polish lake district: Team Molám hit the road to visit the family-run sturgeon farm of Antonius Caviar in beautiful Mazury!

From hatchling to caviar, the experience was a deep dive into sustainability, precision, and patience #alotofpatience

Big thanks to @antoniuscaviar for the warm welcome and to everyone who keeps pushing Polish gastronomy forward. 

We returned full of inspiration [ and just a little obsessed with sturgeons… shoutout to our crew for the custom “Kocham Jesiotry” tees! ].

This educational trip was our prize for ranking #7 in last year’s @forbespolska x @madeforrestaurant Top 50 Innovative Restaurateurs in Poland.

‘Molám Cooks at the Winery’ Vol. 2

Late Summer team field trip with Pawel Rymarczyk from @rbimportwin - this time, we traveled from Kraków, through Slovakia, to the beautiful volcanic rolling hills of Hungary’s Tokaj region.

Young winemaker Gilbert Balázs from @gilberriesandwine although a little bit under the weather, welcomed us to his vineyard and wine cellar. 

But you don’t necessarily have to travel to Tokaj to enjoy his natural wines: Gillberries’ ‘Voodoo Love’ [ Furmint & Hárslevelű ] is available at @molam_krk and @Kawa_Wino at Stary Kleparz.

We stayed with Szilvia and Zsolt at Karadi Berger Winery in the picturesque village of Erdőbénye, where we cooked Thai food for our gracious hosts. 

If you’re visiting the Tokaj region* be sure to check out their winery, which they first started building as a hobby in 1999 and maybe even stay in the same beautiful spot as we did.

*The Tokaj region, historically famous for its Tokaji Aszú, one of the world’s most renowned sweet wines, has been undergoing a fascinating transformation in recent years.

In the past two decades, a new wave of winemakers has been redefining the region’s identity, shifting focus towards high quality dry wines, primarily from the Furmint and Hárslevelű grape varieties.

Winemakers are experimenting with spontaneous fermentation, extended skin contact  and aging in amphorae or used barrels, creating more interesting, food friendly and terroir driven wines.

A dish inspired by our recent late-night eats at 
Yeh O Chula in Bangkok, famous for their viral Mama Tom Yum noodles [ and the epic queues to get in ] 

One dish that totally hit the spot? This Thai-style salmon “ceviche”! Crazy fresh, zesty, and the perfect balance after tackling their massive pot of Mama noodles.

Right now, we’re pairing it with Red Nahm Jim because our current batch of red chillies has an incredible fruity kick. But come back in a few weeks, and you might find Green Nahm Jim Talay on the plate instead, as we let the freshest ingredients lead the way.

YPSS: All the best flavors of Spring & Summer in one dish: bright, zesty, refreshing, herby and packed with heat.

Since the very first melamine plate heaped with wok fried Brussels sprouts, packed with that unmistakable wok hei flavour, left Molám kitchen in late November 2019, our Pad Khanaeng dish has become an instant sensation.

It continues to capture hearts  and taste buds  every Autumn & Winter, keeping its dedicated aficionados coming back for more year after year.

Here at Molám, we’re all about staying ahead of the trends, and it’s super exciting to see our original PK recipe inspiring other restaurants and chefs to embrace this humble veg.
While some may have taken our recipe directly, we love seeing creativity take over as this local produce gets the spotlight it deserves - right on the table for everyone to enjoy.

CHEF’S TIP: For a successful creation, don’t overcook those lovely sprouts! They need to stay crunchy to preserve their delicious flavour and healthy goodness. 

Also, while at Molám don’t miss the ‚Royal’ version, which comes with crispy pork belly and is often available off the menu!

FUN FACT: This year, Brussels sprouts season kicked off early, with the first plates making their debut by mid September. When we temporarily took it off the menu to give it a short break [ as the season usually runs until January ], we received reviews that deducted stars for that very un-tactical move on our part - it just shows the unconditional love for this amazing seasonal dish.

Pad Kee Mao Talay [ ผัดขี้เมาทะเล ] 

A classic Thai dish elevated by our in-house handcrafted Sen Yai noodles: thick, wide, stretchy, and irresistibly slippery.

These noodles are the ultimate comfort food, even on their own, but they truly shine in this bold and flavourful stir fry.

The name “Pad Kee Mao” is steeped in legend and often labeled as a product of a drunken culinary creation, hailed as the perfect post-drinking dish with the big, unapologetic flavours we all crave after a night out.

There are as many variations of this dish as there are households in Thailand and there’s no single, set recipe.  Our current version features Sen Yai noodles wok-tossed  with fresh seafood, perfectly capturing the essence of the sea, or “Talay” as it’s known in Thai.

For us here at Molám HQ, every plate of these fresh, wok-stir-fried fat noodles delivers a mouthwatering, firework worthy experience.

Neua Yang Nahm Dtok [ เนื้อย่างน้ำตก ] also known as Spicy Thai Grilled Steak Salad holds a special place on our menu roster for a good reason.

This one’s for those craving the real flavours of Thailand, beyond the tourist trail: originating from the Thailand’s Northeastern region, Isaan, it  brings an intense, refreshing experience. 

Slices of grilled beef are tossed with shallots, chilli, fresh Thai herbs and a hint of roasted sticky rice powder [ Khao Khua ] for that perfect crunch.

We serve the beef rare to medium-rare, letting the dressing of lime juice, fish sauce, chili, and a touch of sweetness continue to ‘cook’ the beef in the bowl.

The name Nahm Tok, in Thai means “waterfall”, and as they say is inspired by the juices dripping from the beef as it grills or perhaps by the sizzling sound as they hit the flames. Either way, this salad delivers a bold and refreshing taste, packed with the unmistakable vibrance of authentic Isaan flavours.

To enjoy it like a local, pair it with sticky rice to soak up every last drop of the salad juices.
