We are bang in the middle of the soft shell crab season which runs from around April/ May till September. During this period the crabs fatten up in order to go through the process of molting [ getting rid of their shell ] so they can grow bigger and that’s exactly the time of the year when they are most delicious. 

Each time we manage to put our hands on the fresh batch, seasonal special - 
Y A M  P U U  N I M  T O D  will be crash landing on the plates @molam_krk 

We might swap a watermelon for mango & play a little bit with the components of the dressing or salad, but the center stage will be taken by the bad ass softies in flavoured light tempura batter*

Thai Southern aromatic curry.

So, the Gaeng stands for 'curry' and Gari means 'aromatic' from which English word 'curry' has been derived.

Gaeng Gari is one of Thailand's 'foreign' curries as it's made by using ingredients which are not traditionally used in the process of Thai curry paste making. 
Those 'foreign' ingredients are dry spices which came to the country a few centuries ago all the way from India, Persia, Middle East and Birma with the traders.

The Gaeng Gari curry is thick, creamy and, thanks to the spices [ star anise, maze & cardamom ], very very aromatic. 
We have put a vegan spin on this one and made it with young asparagus & smoked tofu, garnished with fresh coconut shavings, crispy fried shallots & coriander. 
A small serving of sticky rice or a roti will complement it perfectly.

Here is a Gaeng Keow Wan Talay a.k.a Thai green cu Here is a Gaeng Keow Wan Talay a.k.a Thai green curry with seafood, fish balls & khanom jin noodles - the latest addition to our ever changing menu.

We have just made 17 kg of super aromatic green curry paste which was made with the seafood & fish in mind.
It's worth knowing that in proper Thai cuisine when making a curry paste you adjust certain ingredients to complement and enhance the taste of the dish depending on what you are planning to serve it with - you will make a different paste if you want to serve it with chicken, a different one if beef is your preferred choice and a different one if you like your curry, for example, with seafood - you just don't make a generic one which fits them all.

Hence the reason why at Molám you don't get to choose a random selection of ingredients, but when you order a curry you get a well thought out dish instead.

N A E M  S I I  K R O N G  M O O  T O D [ แหนมซี่โครงหมู ] - Thai fermented & deep fried pork ribs

Recently you must have seen a series of stories on our SM's featuring dishes containing fermented meats - we have been working on those while in the well overdue lockdown.
We've already had grilled Naem [ Thai fermented sausage which is actually going to be back on the menu this weekend], Pad Woon Sen noodles with Naem [ which is currently on the menu ] and fermented pork ribs [ on the picture here ].

Everyone must be aware that a fermentation is a way of food preservation, but not everyone is actually aware that in South East Asia the fermentation process has been taken to another level and includes meats & fish! When using this unique traditional technique of preservation the meat is covered in a mix of cooked glutinous rice, garlic and salt, packed up into vacuumed bags and then left in the controlled environment [ for around 3 to 5 days ] for the magical process to take place  Once this stage is over we then deep fry fermented pork ribs meat which has a distinctive tangy & funky aftertaste and we serve it with ginger, peanuts, pickles, chilies & coriander - as a typical example of Thai drinking food nothing beats these as a treat while having a nice cold beer.

Coconut curry soup with grilled young cabbage, pickled mustard greens, egg noodles, coriander, Thai shallots & lime served with crispy fried noodles on the top. 

Recently we have been asked to provide catering services for a corporate event outside of Cracow but with the simple brief in mind - 'no meat'.

As we really really wanted to showcase different types of Thailand's culinary regions, in our minds there was no better contender to represent Northern Thailand on that table than Khao Soi, but obviously minus the meat ... 
To just remove a chicken from the original recipe was not an option. We thought that if the general vibe in Lanna Kingdom is 'bbq & grilling' so we could incorporate into the dish our grilled, burnt 'meaty' young cabbage to add a 'body' to this rather elegant and balanced Thai soup. It was a bingo & a perfect fit . 
We were told to never serve it with anything else, but the burnt cabbage ONLY ... so here it is - Vege Khao Soi - on the menu from today.

Attention 1: For the people with allergies and possibly for other people's pleasure - we have sneaked in some peanuts #notinoriginalrecipe to give this beautifully silky Chiang Mai soup an additional texture.

Są takie miejsca w Krakowie, które powinien znać każdy, bo to takie nasze perełki 🥰.
 
@molam_krk to jedno z takich miejsc, mój numer jeden w czołówce krakowskich restauracji: to tam zabieram znajomych odwiedzających Kraków po raz pierwszy.

Jak sami się reklamują, ich kuchnia to intensywność smaków i bogactwo tekstur. Nie mogłabym się z tym nie zgodzić, bo smaków jak w Molam nie znajdziecie w innej miejscówce w Krakowie. To nie są znane wszystkim i bezpieczne „tajsko-polskie” propozycje, to nieoczywista kuchnia, która jednych zachwyci, innych może zrazi (choć nie znam nikogo kto by narzekał).

A czy wiecie, kto stoi za tym konceptem? Tomasz Muza, który w Londynie był Head i Sous Chef’em w trzech najpopularniejszych tajskich restauracjach w Wielkiej Brytanii. Te miejsce są zawsze oblegane, sprawdzone info 😉.

Koncept „dzielenia się” posiłkiem, czyli zamawiania paru pozycji na spółkę ze znajomymi bardzo do mnie trafia, bo uwielbiam próbować wielu smaków. W Molam byłam już wielokrotnie, teraz postanowiłam sprawdzić ich menu na dowóz i chyba po raz pierwszy, wraz ze znajomymi, byliśmy zachwyceni naprawdę KAŻDYM zamówionym daniem.

W naszym zamówieniu znalazło się:

Gaeng Daeng Fak Tong 🌱 - Czerwone wegańskie curry na mleku kokosowym, z dynią Hokkaido, szpinakiem, tostowanymi orzeszkami ziemnymi, świeżą kolendrą i prażoną szalotka

Pla Tod Dorsz - chrupiące kawałki dorsza w glazurze z sosu Soas Sam Rot- słodko-kwaśno-słony, w sałatce z tajskich ziół

Pad Kee Mao - Stir fry z makaronu ryżowego, wędzonych mięs, szpinaku, kukurydzy baby, chilli i tajskiej bazylii

Khao Pad Gai - Stir fry z ryżu jaśminowego z przyprawą curry, kurczakiem, jajkiem, kukurydzą baby, pomidorkami, szczypiorkiem, posypką z chrupiącego czosnku, serwowane ze świeżym ogórkiem

Mus czekoladowy - infuzowany liśćmi pandanu, z migdałami, kawą i tajską bazylią

To było genialne!

As we are bang in the middle of a pomelo season we thought that making a light & refreshing low calories traditional yam [ spicy salad ] straight after co-called 'Fat Thursday' [ a day of donuts eating extravaganza here in Poland ] would be a perfect choice to compensate for recent nationwide intake of trillions of empty calories.

Deep fries, stir-fries and steamed dishes, we all know, love and associate with Siam, actually come directly from Chinese cuisine.

K H A O S O I L A O [ເຂົ້າຊອຍ] i K H A O  S O I  L A O [ເຂົ້າຊອຍ] is completely different from it's well known cousin Khao Soi - curry coconut soup from Northern Thailand.

Khao Soi Lao soup originates from Northern Laos and is made with clear broth served with wide rice noodles heaped with concoction of spicy & oily 
minced pork meat, tomatoes and fermented soybean paste called Nam Prik Ong [ น้ำพริกอ่อง]. 
Nam Prik Ong is a true star of the show here and you can easily think of it as Southeast Asian style bolognese sauce packed with many layers of flavour.

Bolognese + pasta? 
Hell yeah, bring it on!!

We serve Khao Soi Lao with Sen Yai [ก๋วยเตี๋ยวเส้นใหญ่ ] big, fatty & chewy, freshly steamed homemade rice noodles, so you can end up with a ridiculously satisfying and decadent bowl of a steaming Lao soup.

K H A O  S O I  L A O  to kompletnie inna zupa niż jej znana kuzynka Khao Soi czyli kokosowa zupa curry z północnej Tajlandii.

Pochodzi z północnego Laosu i jest przygotowywana na bazie klarownego bulionu, podawanego z szerokimi wstążkami makaronu ryżowego oraz Nam Prik Ong czyli pikantną i oleistą miksturą z mielonego mięsa wieprzowego, pomidorów oraz pasty z fermentowanej soi ( to tak w skrócie, oczywiście ).
To właśnie Nam Prik Ong, napakowany wielowymiarowymi smakami jest tutaj 'star of the show' i można go porównać do sosu bolognese w stylu południowo-wschodnio azjatyckim.
