Molam x Umami Bombers are going ballistically loco with junk & trashy Thai inspired Drinking Food Bar being set up by the latter @molam_krk this coming Saturday*

Alongside Molam's classics, @umami_bombers [ their Thai BBQ joint opening soon ] will be dishing out the following junk:

Burger:
Brioche, entrecote burger patty, chilli jam mayo, tomato, lollo salad, homemade Thai bbq sauce, grilled onion rings, crispy shallots, pickled cucumbers & Thai herbs salad

Hot Dog:
Grilled Sai Oua sausage, pickled mustard greens, fish sauce mayo, crispy shallots, chillies, praew leaves.
Special Hot dog buns made to order by @zmaczeni

Chicken Taco:
Roti, Gai Yang, Thai herbs salad, tomatoes, cucumber, pickled baby shallots, Sriracha mayo, crispies & chillies

Jungle Curry with rabbit leg confit.

It's healthy [ does not contain coconut milk as it's cooked on a duck broth ], herbaceous & very spicy.

They say the name of this curry comes from the fact that traditionally, the ingredients used in it were those that could be found in the forests of Northern Thailand - but that's not actually true - Thai aristocrats used the term 'jungle' to describe the food for commoners. Ouch!

We think rabbit leg confit is probably too much for a commoner, but hey, it’s the Year of the Rabbit and we can all chill.

Gaeng Som [ แกงส้ม ] Southern Thai s

Gaeng Som [ แกงส้ม ] Southern Thai sour curry - not to be confused with Gaeng Lueng - as this Southern version is more sour, spicy and salty than the one from Central Thailand.

The stock is used instead of coconut milk so it's consistency is more soup-like. The homemade curry paste is simple, and the use of tamarind water & fresh makrut lime juice makes it much lighter & more refreshing than classic Thai curries.

Southern Gaeng Som usually contains fish or seafood [ we've used super fresh Masurian eels ], usually some fruit [ in ours we've put grilled pineapple ] and vegetables which are available at hand.
Et voilà - we have beautiful, light, sour & spicy Thai Gaeng Som here in Cracow.

It's hot, so it's time to go South!

Pad Sator Goong: Thai Stink Beans with Shrimp [ วิธีทำ กุ้งผัดสะตอ ]

This weekend only: Southern dish of sator beans stir fried with prawns, chilli jam & gapi.

Those little, green, stinky clusters of joy freshly delivered from London's Chinatown by @tom.muza are known as either sator beans, smelly beans, bitter beans, twisted cluster beans, stink beans, parkia speciosa or sataw in Thai [ สะตอ ].

They are not vegetables, but beanlike seeds of a large tree, sort of a local delicacy and also quite expensive even for Thai standards.
They are aromatic in a very special way - 'distinctive aroma' can be described as one of a methane gas and you can taste the beans in your mouth for quite a long time after eating.
Stink beans also have an effect on your body functions similar to asparagus ... 🙂

During this period the crabs fatten up in order to go through the process of molting [ getting rid of their shell ] so they can grow bigger and that’s exactly the time of the year when they are most delicious.

Each time we manage to put our hands on the fresh batch, seasonal special -

Thai Southern aromatic curry.

So, the Gaeng stands for 'curry' and Gari means 'aromatic' from which English word 'curry' has been derived.

Gaeng Gari is one of Thailand's 'foreign' curries as it's made by using ingredients which are not traditionally used in the process of Thai curry paste making.
Those 'foreign' ingredients are dry spices which came to the country a few centuries ago all the way from India, Persia, Middle East and Birma with the traders.

The Gaeng Gari curry is thick, creamy and, thanks to the spices [ star anise, maze & cardamom ], very very aromatic.
We have put a vegan spin on this one and made it with young asparagus & smoked tofu, garnished with fresh coconut shavings, crispy fried shallots & coriander.
A small serving of sticky rice or a roti will complement it perfectly.

Here is a Gaeng Keow Wan Talay a.k.a Thai green curry with seafood, fish balls & khanom jin noodles - the latest addition to our ever changing menu.

We have just made 17 kg of super aromatic green curry paste which was made with the seafood & fish in mind.
It's worth knowing that in proper Thai cuisine when making a curry paste you adjust certain ingredients to complement and enhance the taste of the dish depending on what you are planning to serve it with - you will make a different paste if you want to serve it with chicken, a different one if beef is your preferred choice and a different one if you like your curry, for example, with seafood - you just don't make a generic one which fits them all.

Hence the reason why at Molám you don't get to choose a random selection of ingredients, but when you order a curry you get a well thought out dish instead.
