Y O U A R E W H A T Y O U E A T Awareness of Y O U  A R E  W H A T  Y O U  E A T

Awareness of this relationship means that these days we all pay more and more attention to the quality of the products we consume, especially those of animal origin.

We are totally aware that animal welfare has a significant impact on the quality and taste of the meat, so when a few months ago we were approached  by research scientists from the Department of Zoology and Animal Welfare of the University of Agriculture in Krakow asking us if we would be interested in using meat from a farm where animal welfare is a priority we obviously answered 'HELL YEAH!’

And that's how it all began.

To cut a long story short: 
Molam is now part of the pilot programme run by Step2Walfare association of scientists and we are using a meat for our Haeng Lae grilled pork belly from a farm run by passionate farmer Mr. Sebastian Walkowicz who is focused on animal welfare, quality and safety of the meat production. 
At his farm the welfare of his pigs is constantly being monitored by an animal maintenance system called 
‚Pig monitor' developed by academics, that determines the actual comfort of animals' lives based on many criteria in a completely automated and therefore objective way.

We had a chance to meet  Bob in his natural environment @Strekov village in Southern Slovakia.
This rather shy pet donkey is an inspiration behind amazing red wine from Zsolt Sütó @strekov1075 

Next slide: meet the BOB wine [ juicy, fruity & little bit fizzy - perfect for those long Summer evenings ] in it's natural environment @molam_krk.
In the cooler, right behind it sits FRED X [ a.k. a Fucking Red No.10 ] waiting to jump in on the menu.

Also, meet Mr. Zsolt  himself - super friendly zero-sulfur natural wine maker from Slovakia who can entertain the bunch of total strangers with stories, homemade food, the tour of the cellars and of course, amazing wines all night long and still be ready to show his vineyards at 7 AM next morning.

Jungle Curry with rabbit leg confit.

It's healthy [ does not contain coconut milk as it's cooked on a duck broth ], herbaceous & very spicy.

They say the name of this curry comes from the fact that traditionally, the ingredients used in it were those that could be found in the forests of Northern Thailand - but that's not actually true -  Thai aristocrats used the term 'jungle' to describe the food for commoners. Ouch!

We think rabbit leg confit is probably too much for a commoner, but hey, it’s the Year of the Rabbit and we can all chill.

Third year running long awaited Offal Halloween weekend with brand new funky dishes served for the very first time at Molam HQ: grilled goose hearts on skewers, bamboo stems stir fried with homemade Tai Pla, pig's head Dtom Saap soup, fried chicken feet & Thai meat jelly with pork knuckles.

And of course, we will be dishing out some of past year's offal favourites: grilled marrowbone with ox cheeks Massaman curry, fried chicken gizzards, Thai blood sausage grilled in banana leaf & Ox heart laab dip.

Gaeng Som [ แกงส้ม ] Southern Thai s Gaeng Som [  แกงส้ม ]  Southern Thai sour curry - not to be confused with Gaeng Lueng - as this Southern version is more sour, spicy and salty than the one from Central Thailand.

The stock is used instead of coconut milk so it's consistency is more soup-like. The homemade curry paste is simple, and the use of tamarind water & fresh makrut lime juice makes it much lighter & more refreshing than classic Thai curries.

Southern Gaeng Som usually contains fish or seafood [ we've used super fresh Masurian eels ], usually some fruit [ in ours we've put grilled pineapple ] and vegetables which are available at hand. 
Et voilà - we have beautiful, light, sour & spicy Thai Gaeng Som here in Cracow.

Pad Sator Goong: Thai Stink Beans with Shrimp [ วิธีทำ กุ้งผัดสะตอ ]

This weekend only: Southern dish of sator beans stir fried with prawns, chilli jam & gapi.

Those little, green, stinky clusters of joy freshly delivered from London's Chinatown by @tom.muza are known as either sator beans, smelly beans, bitter beans, twisted cluster beans, stink beans, parkia speciosa or sataw in Thai [ สะตอ ]. 

They are not vegetables, but beanlike seeds of a large tree, sort of a local delicacy and also quite expensive even for Thai standards.
They are aromatic in a very special way - 'distinctive aroma' can be described as one of a methane gas and you can taste the beans in your mouth for quite a long time after eating.
Stink beans also have an effect on your body functions similar to asparagus ... 🙂

We are bang in the middle of the soft shell crab season which runs from around April/ May till September. During this period the crabs fatten up in order to go through the process of molting [ getting rid of their shell ] so they can grow bigger and that’s exactly the time of the year when they are most delicious. 

Each time we manage to put our hands on the fresh batch, seasonal special - 
Y A M  P U U  N I M  T O D  will be crash landing on the plates @molam_krk 

We might swap a watermelon for mango & play a little bit with the components of the dressing or salad, but the center stage will be taken by the bad ass softies in flavoured light tempura batter*
